Chicken is my favorite meat and my favorite way to eat it is fried. I know not the healthiest, but that is the southern in me.This recipe has fried chicken as well as some great condiments making it The Ultimate Chicken Sandwich. From the base fried chicken breast in this recipe you can create whatever you consider to be the ultimate chicken sandwich. I like mine with bacon and ham, mustard and mayo or cucumbers, lettuce and ranch. My other half likes his with teriyaki sauce on the chicken breast, bacon and ham, as well as a toasted onion bun (Ever tried one? They are awesome.) The Ultimate Chicken Sandwich Recipe:
Prep: 15 minutes
Cook: 20 minutes
3 boneless skinless chicken breast
2 cups of flour ( AP or SR)
3 large eggs
1 tbsp salt
1 tbsp pepper
1 tbsp paprika
1 tsp onion powder
Vegetable oil for frying
Bun of your choice
Condiments of your choice
Heat your oil to 375 degrees. Take your chicken breast and but them in halves long ways. Start at the bigger end, placing your knife in the center of it. Hold down on the top as you slice as evenly as possible from one end to the other. This will give you 2 thinner pieces of chicken. Then you need to even them up a little using a meat mallet or a heavy pan. Beat them until they are fairly the same thickness.
Take your flour and mix your seasons into it. In a separate bowl crack your eggs and mix them up. These will be the breading for our chicken. Now one by one coat your chicken in the egg then in the flour. Shake the loose flour off and repeat one more time with each piece of chicken. Then place the breaded chicken breast in the hot oil. Let them fry for 15 to 20 minutes. Flipping throughout to ensure you get that golden brown chicken breast.
Take the chicken out of the oil and place on napkins to absorb so of the excess oil. While the chicken is resting get your condiments out. Fix your Ultimate Chicken Sandwich, and enjoy!!
